Named for the hour it keeps.
In Hongdae a night usually ends because the room closes, not because you're done. Saebyeok is a Hongdae Pub built the other way round.
CHAPTER 01
The name is the closing time.
Saebyeok is the hour just before sunrise. It is also, literally, when this place closes — 4am the next morning every day except Saturday, and on Saturday not at all, because it runs a full 24 hours. We wanted a Hongdae Bar you don't have to leave when the last train goes, or when the second round turns into a third.
CHAPTER 02
Not bar snacks — a proper meal.
Ten of the twenty-eight dishes on the board are stews — the largest section on it. Mille-feuille nabe, seafood soft-tofu, boneless samgyetang with scorched rice: things you would happily eat as dinner. So from opening through the evening this is a Hongdae Restaurant people come to for a meal, and after dark the exact same dishes become what you drink over. That is why there is only one menu, not a lunch one and a late one.
CHAPTER 03
The makgeolli is made here.
Strawberry, omija and yuzu, made in house and poured in 1L or 500ml — the three the board groups under 手工 makgeolli. Beside them sit four fruit sojus, five highballs, and a shelf of coco-ades and teas with no alcohol in them at all. A Hongdae Pub should still have something on the board for the person who isn't drinking.
